Black Garlic Mashed Potatoes

Thanksgiving is around the corner once again and I am looking forward to a nice meal and of course the resulting food coma. This black garlic mashed potatoes probably not something you have tried before but worth it. I mean I am willing to put this recipe up against your grandmas mash. It is packed with flavor and umami.

This recipe is easy to make and the star is the ground black garlic that packs a lot of flavor. It all comes together with a couple boiled potatoes, light cream, sour cream and brown butter. The black garlic is tossed into the brown butter for a quick second and then into the mash it goes. Trust me when I tell you that this is going to make you think about mash in a whole new way.

Black Garlic Mashed Potatoes

Mashed potatoes flavored with black garlic and brown butter

  • 5-7 potatoes (russet)
  • 1-1½ tbsp ground black garlic
  • ¼ cup sour cream
  • 2 tbsp butter
  • ½ – ¾ cup light cream
  • salt and white pepper to taste
  • chives (for garnish) (optional)
  1. Bring a pot of salted water to a boil. Wash and cut the potatoes into cubes but keep in mind the smaller the potatoes the faster they cook. Boil until you can easily pierce with a fork or about 10 mins. Drain, cover and set aside.

  2. The black garlic should be a fine grind so grind using a grinder or mortar and pestle. Heat the cream in a small pot over low heat until warm. At the same time brown the butter using a skillet over medium high heat. You will know when it's ready when it changes color and turns brownish/smells nutty.

  3. In a mixing bowl, rice the cooked potatoes with a ricer or mash using a masher. Season with salt and white pepper, slowly add in the warm light cream, sour cream and stir. Use more or less of the cream depending on how creamy or lumpy you want it. Add in half the black the garlic and stir. Add the other half of black garlic to the brown butter and quickly stir into the mash potatoes. Serve and garnish with chopped chives if desired.
