Black Garlic Hummus

Black Garlic doesn’t get the credit it deserves and it has yet to have it’s time in the spotlight. Nonetheless, you can still get in on this delicacy before it becomes mainstream. Black Garlic comes from garlic going through a natural cured process that breaks down the enzymes.

With no additives or preservatives, the result is an umami-rich delicacy that is savory, with hints of balsamic vinegar. It can be eaten as-is or used in dips, spreads or sauces.

I love hummus but the black garlic takes it to another level! The black garlic adds a new dimension that is not expected, in a good way. Peeling the skins off of the chickpeas is a painstaking task but very well worth it.

Black Garlic Hummus

Hummus made with black garlic for that umami punch!

  • 1 15 ounce can Chickpeas (peeled) (undrained)
  • 1 bulb black garlic (peeled)
  • 2 cloves garlic
  • 2 tbsp lemon Juice
  • ½ tsp lemon zest
  • 1/2 tsp cumin
  • 2-3 tbsp olive oil (extra virgin)
  • salt and pepper to taste
  • 2-3 tbsp tahini
  • paprika (dusting for garnish)
  • 2 tbsp aquafaba (chickpea liquid)
  1. Drain the liquid from the chickpeas into a cup and set aside.

  2. Peel the skins off of the chickpeas by hand.

  3. Put the black garlic in a small bowl and mash it with a fork into a paste. Stir in the olive oil. Don't worry if it's not smooth as it will smooth out in the food processor.

  4. Add the chickpeas, black garlic paste, garlic, tahini, lemon juice, lemon zest, cumin, olive oil, salt and pepper into a food processor.

  5. Pulse for about 2 minutes until smooth. Scrape down the sides halfway through to make sure everything is integrated. For a smoother texture, pulse longer and add some of the chickpea liquid from the can to help smooth it out.

  6. Taste and add salt and pepper as desired.

  7. Serve on a plate and with a drizzle of extra virgin olive oil and a dusting of smoked paprika.
