Grilled Corn with Jamaican Jerk Maple Butter

One of the things I miss as summer comes to an end is the fresh corn you get during the summer time. I usually keep it simple by boiling it or sometimes grilling it. I mean why mess with the natural sweetness of this summer treat. Well, we can mess with it a little and that’s where this jamaican jerk maple butter basted corn comes in.

I love easy recipes that come together with very little effort. It does not get any easier than this with this recipe that requires 4 ingredients. A little butter, jamaican jerk spice mix, maple syrup and you are minutes away from flavor explosion.

Heat up those ingredients over the stovetop and stir as the butter melts. Grill your corn until just about done and baste the sauce over the corn. Grill for another minute or two and let the flames caramelize the sugar from the maple syrup.

  • 3 corn on the cob (husk removed or pulled over)
  • 2 tbsp butter
  • ½ tbsp jamaican jerk seasoning
  • 1 tbsp maple syrup
  1. Add the jerk seasoning, butter and maple syrup to a small saucepan. Heat on low until the butter melts for 3-5 and stir until combined. Set aside

  2. Set the grill to 425°-450° then place the corn to the grill. Be sure to keep the husk away from the flames as much as you can if you're grilling with the husks. It's okay if it catches the flames but try not to have it directly under the fire. Grill the corn turning about 3-4 minutes in. Once the corn is just about done which would be about the 8 minute mark, start basting it with the sauce for an additional 1-2 minutes. Keep a close eye on it as it will begin to char from the sugar in the maple syrup.

  3. Enjoy immediately and feel free to drizzle a little more sauce before serving.
