Panzanella with Everything Bagel Dressing

If you are like me and love bread then you will love this panzanella salad. I mean a salad where bread is the main event is definitely okay with me. Since bread is involved in a huge way in this recipe, I had to make sure that the dressing was fitting. Typically, panzanella is dressed with an olive oil/vinegar dressing but for this I whipped up an everything bagel dressing.

Panzanella is usually made with stale bread which I reach for when it’s marked down at the grocery store. I love buying stale bread and using them as croutons. I dice the bread, drizzle some olive oil over it then season with salt and pepper and toast. The rest of the salad comes together by adding cucumbers, tomatoes, onions and of course the dressing.

The dressing is a creamy dressing made with mascarpone, apple cider vinegar, and some everything bagel seasoning. Feel free to go with a more traditional dressing but this dressing does not disappoint. Enjoy!

Panzanella Salad with Everything Bagel Dressing

  • 3 cups cubed ciabatta bread
  • 1 cup cherry tomatoes or tomato medley (halved)
  • 2 persian cucumbers (thinly sliced)
  • ¼ small onion (sliced)
  • 1-2 tbsp olive oil (extra virgin)
  • salt and pepper (to taste)

Everything Bagel Dressing

  • 3 tbsp mascarpone
  • 1-2 tsp everything but the bagel seasoning
  • 1 tbsp apple cider vinegar
  • ½ tbsp honey
  • 2-4 tbsp water
  1. Place the ciabatta cubes in a bowl, drizzle with olive oil, season with salt & pepper and toss. Line a toaster oven pan or place on aluminum foil and toast until golden.

  2. While the ciabatta cube is in the toaster oven, make the dressing by combining and stirring all ingredients in dressing section above. Set aside.

  3. Begin plating by adding the ciabatta, sliced onions, halved tomatoes and persian cucumbers. Dress with as much of the dressing as you like. Feel free to sprinkle more everything but the bagel seasoning on the panzanella.
