Roasted Persimmon and Blueberry Protein Waffles

Waffles, nothing we don’t already know about but the question is how do you like it? Waffles are always on the menu every weekend and I am always finding ways to spice it up. I prefer to used protein mix made by Kodiak cake because of the quality. For the berries, I tried something new by roasting persimmons and blueberries to top the waffles.

I tried persimmon for the first time recently and I was amazed at how much flavor this “berry” had. It looks like a tomato but a lot firmer with a sweeter note. It can be eaten as is but roasting it with a little olive oil and agave adds another dimension. I added some frozen blueberries the last 2 minutes just until slightly blistered.

Feel free to use regular pancake/waffle mix if you prefer. You can also make your own mix from scratch which is just as easy. In addition, you can search my pancake mix on the site but just add some sugar and canola oil to make waffles.

Roasted Persimmon and Blueberry Protein Waffles

  • Belgian Waffle maker
  • 1½ cups Kodiak cakes protein buttermilk mix (dry)
  • 1½ cups almond milk or cashew milk
  • 1 persimmon (cut into wedges)
  • ⅓ cup frozen blueberries
  • ½ tbsp olive oil
  • ½ tbsp maple agave syrup or honey
  • 1½ tbsp canola oil (for the waffles)
  • maple syrup (for serving)
  1. Preheat the oven to 425°. Add the olive oil and agave syrup to a mixing bowl then toss the persimmon wedges until coated. Line a small baking sheet with parchment paper and bake for 10-12 minutes. Sugar burns quickly so keep an eye on it. Add the frozen blueberries to the sheet 2 minutes before the persimmon is done. Set aside once done.

  2. While the persimmon roasts. Heat up your waffle maker and make the waffle mix according to the package or whatever mix you use. For this, mix the waffle mix, cashew milk, and oil in a bowl. My waffle maker uses about 3/4 of the mix for one waffle and it's a double waffle maker. If you have a single, make one at a time.

  3. Once the waffle is done, top with roasted persimmon and blueberries. Drizzle with your preferred maple syrup. I used bourbon maple syrup which actually paired well with the roasted fruit. Enjoy!
