Gyros are one of my favorite wraps to make and these suya spiced salmon wraps is a play on that. Where gyros are Mediterranean, these wraps is inspired by Nigerian street food thanks to the suya spice. The suya spice is a blend of spices that consist of ground peanuts, ginger powder, cayenne pepper and more.
Just like any other spice it can be made hotter by upping the cayenne pepper. I opted to buy my suya spice at the local African market that is until I perfect my own blend. When I lived in Nigeria I always looked forward to “suya” as we called it. Almost every corner had a hawker usually late in the evening grilling up some thinly shaved beef. Once the beef was done they sprinkle a decent amount of the suya spice and top with sliced onions. It was always wrapped in old newspapers and the aroma just seemed to be accentuated by that.
To make these wraps, I seasoned the salmon cubes with the suya spice and grilled them for about 10 minutes. For the filling, I diced up some avocado, cucumber and halved cherry tomatoes then seasoned it with salt. Feel free to use naan if you cannot get a hold of pita but pita should be the first option.
Suya Spiced Salmon Wrap
Suya spiced salmon, tomato and cucumber salad on a gyro bread
- 1 lb salmon
- 2 pitas
- ⅓ cup cherry tomatoes (halved)
- ½ avocado (diced)
- ¼ cup cucumber (diced)
- 1½ tbsp suya spice
- ½ tbsp olive oil
- red onions (sliced)
- salt and pepper (to taste)
- 1 lime
Heat up a grill to 350°. White the grill heats up, use a knife to remove the skin from the salmon and cut into 1 inch cubes. In a mixing bowl, add 1 tbsp of the suya spice and the olive oil. Stir and add in the salmon cubes. Use kabobs to easily flip the salmon cubes. Grill for 10 minutes flipping halfway.
You can start making the tomato salad before grilling the salmon or after if you prefer. In a clean mixing bowl, add the halved cherry tomatoes, diced avocado and cucumbers. Add a squeeze of lime juice and season with salt and pepper.
Begin prepping the wraps by placing some of the tomato salad on both pitas, carefully remove the salmon off the skewers and split between the pitas. Fold over and enjoy.
