Watermelon rules the summer from salads to drinks to just having it fresh, as is. It is very refreshing and especially satisfying after being chilled, making it perfect for a hot summery day.
Coconut water is just as refreshing and I drink it all summer long to stay hydrated. With all the brands out there making coconut water, it is hard to find one that stands out but after trying many, Vita Coco definitely tops my list.
Vita Coco makes a variety of coconut waters including flavored options but I have fallen in love with their pressed coconut water. Their pressed coconut water is made by blending coconut water with pressed coconut making for an electrolyte-rich and hydrating drink.
This watermelon coconut mule uses fresh watermelon juice and pressed coconut water to elevate the classic Moscow mule. Watermelon juice is hard to find and can be pricey but you can easily make some from scratch using cubed watermelon. Just blend, strain and voila!
I always like to make extra watermelon juice to use for other drinks, or to drink as-is. A quarter of a large watermelon (about 5 cups, cubed) yields about 4 cups of juice. Pour any excess into a mason jar and store in the fridge for up to two weeks.
With your watermelon juice and coconut water, you are ready to make your cocktail which comes together in no time. Just add fresh lime juice, vodka and ginger beer (diet) and you’re all set. Keep in mind that watermelon has a high sugar content so I try to go for the diet ginger beer to help even things out a bit.
Watermelon Coconut Mule
Refreshing watermelon coconut mule brings a twist to the classic Moscow mule
- 5 cups watermelon (cubed (this yields about 3 more cups of juice than you'll need))
- ½ cup pressed coconut water or coconut water
- 6 ounces vodka
- 4 ounces lime juice (fresh)
- 8 ounces ginger beer (diet)
Add cubed watermelon to a blender and pulse until it becomes liquid. Filter the juice through a fine mesh strainer to separate the pulp.
Add 1 cup of the filtered watermelon juice, pressed coconut water, vodka, lime juice and ice (crushed, if available) to a shaker and give it a few shakes.
Add ice to 4 cocktail glasses and pour the mix from the shaker into the glasses evenly.
Top each glass with about 2 ounces of ginger beer.
Sip and enjoy!
If you don’t want excess watermelon juice, feel free to cube only about 1¼ cups of watermelon.
Feel free to skip the shaker and add all the ingredients into a glass filled with ice. Stir slightly and enjoy.
