Elote Seasoned Home Fries

Some mornings I crave a complete breakfast that includes the usual eggs, bread and potatoes. If I go all out then I love making home fries with the potatoes. You really don’t need much to season your home fries but you can take it to the next level with elote seasoning.

Trader’s Joes elote seasoning is a spice blend that is perfect for sprinkling on cooked corn. But don’t limit it to just that because it is filled with tons of great spices. I use it on home fries whenever I go all out on breakfast as well as season proteins like shrimp.

The trick to making great home fries is to quickly boil the potatoes for 6 minutes, drain and then pan fry with some oil. You will want to add some of the seasoning before transferring it to the pan and then some right before its done. Once you try this, you will likely never go back to just salt and pepper.

Elote Seasoned Home Fries

Home Fries seasoned with elote seasoning blend

  • 2 large russet potatoes
  • 1 red pepper (small) (diced)
  • 1 onion (small) (diced)
  • 2 tbsp Trader Joe's elote seasoning
  • 2 tbsp olive oil or avocado oil
  • 1 tsp salt
  1. Wash and peel the potatoes then cut into ½ inch cubes. Bring a pot of salted water to a boil over medium high – high heat. Add in the diced potatoes and cook for exactly 6 minutes.

  2. Once the potatoes hit six minutes, drain and season with half the elote seasoning. The potatoes will still be firm and that's fine. Heat a cast iron skillet over medium to medium high heat and add a tablespoon of oil. Once the pan and oil is hot, add the onions and peppers to the pan. Cook for about 3 minutes, remove and set aside.

  3. Add the potatoes and let it crisp up for about 8 minutes without touching. The more you flip the potatoes the less likely you will get crispy potatoes.

  4. You can always check one potato for crispiness. Once you get the desired crispiness, continue to cook and stir until completely cooked through. Add the left over oil if your pan looks dry. You should have crispy edges and soft interiors. Add the remaining elote seasoning, cooked peppers and onions and give it a good stir, plate and enjoy!
