Pumpkin Spice Oat and Pecan Cookies

While we are in the midst of pumpkin season, I give you these pumpkin spice oat and pecan cookies. You probably saw my first pumpkin recipe already if you are reading this. Pumpkin is now growing on me but I love that pumpkin puree is not so overpowering. I am here for the spice mix that makes pumpkin recipes what it is. The cinnamon, cloves, ginger and all has a warm and fragrant smell that screams fall.

To make these cookies you will need bananas, pumpkin puree, instant oats, pecans and chocolate chunks or chips. This recipe is a take on the those banana cookies that became a hit a few years ago. While no one really talks about it, I still very much enjoy them as there is no added sugar. The sweetness comes from the natural sugars in the bananas and the little bit of sugar in the pumpkin puree and chocolate chunks.

Pumpkin Spice Oat and Pecan Cookies

  • 4 bananas
  • ½ cup pumpkin puree (canned)
  • 2¼ cup instant oats
  • ⅓ semi-sweet chocolate chunks or chips
  • ¼ cup pecans
  • 1½ tsp pumpkin spice
  1. Preheat oven to 400°. In a mixing bowl, mash bananas and then add in the pumpkin puree. Stir until combined but it's okay if it is not fulling combined and there are still banana pieces in there. Add in the pumpkin spice and stir then add in the oats, pecans and chocolate chunks.

  2. Bake for 12- 14 minutes on a line baking sheet. Allow to cool and enjoy.
