Blue Cornmeal Cookies

A few months ago I tried, and subsequently made a recipe using, blue cornmeal. I still can’t get over my recipe for blue cornmeal scones. I wanted to use blue cornmeal again and these blue cornmeal cookies were the result.

As mentioned in my other recipe, blue cornmeal is not widely available but can be bought on Amazon. It is relatively inexpensive and a little bit goes a long way in this recipe. I love recipes using regular cornmeal, like cornbread, but blue cornmeal takes them to the next level. Blue cornmeal is heartier, sweeter and nuttier.

These cookies only require a couple ingredients and bake in under 12 minutes. When I tried these cookies, I was extremely pleased with the results. I think blue cornmeal might just be my new favorite cornmeal and it should be yours as well. Just know that when blue cornmeal finally gets the recognition it deserves you wouldn’t be new to it.

Blue Cornmeal Cookies

Hearty, sweet and nutty cookies made with blue cornmeal

  • 1½ cups all purpose flour
  • ⅓ cup blue cornmeal
  • 1 stick unsalted butter (room temperature)
  • ¼ cup maple syrup
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • ½ tbsp baking soda
  • pinch salt
  • 1 egg
  • ½ tbsp orange juice
  • ½ cup powdered sugar
  1. Preheat oven to 350°. Add the butter, brown sugar and maple syrup to the stand mixer. Using the paddle attachment, mix on the stir setting until combined and smooth. Add in the vanilla extract and egg and mix on the stir setting for about 30 seconds, until combined.

  2. Gently sift in the flour, baking soda and salt into the stand mixer. Mix using the stir setting until it forms a dough. Add in the blue cornmeal and mix until smooth.

  3. Using a small cookie scoop, scoop approximately 2 tablespoons of the cookie dough and place on a lined cookie sheet about 2 – 3 inches apart. This should yield about 12 cookies. Bake for 11 minutes and remove from the oven. Let it rest on the cookie sheet for about 10 minutes before transferring to a cooling rack.

  4. Make the dipping glaze. Add the orange juice to a small mixing bowl and sift the powdered sugar into the mixing bowl stirring frequently until smooth. Once the cookies have cooled, dip them into the glaze and place them back on the cooling rack to set. These should be ready to eat in less than 5 minutes.
