Cannoli Filled Ebelskivers

Ebelskivers are something I make on occasion on the weekends as they are similar to pancakes. These ebelskivers are stuffed with a creamy cannoli filling and then dusted with powdered sugar.

I recently made an apple cider ebelskiver recipe which is also available via the clickable link. This recipe is very easy to make and all you need is the special pan which is available on Amazon. The ebelskivers can be made using homemade pancake mix or store bought.

The Cannoli filling consist of whole milk ricotta cheese, cream cheese, powdered sugar and vanilla extract. It sits in the fridge while you make the ebelskivers which helps it thicken a bit.

Once the ebelskivers are done, you can cut a hole down the middle to create some separation and stuff it with the cannoli filling. Serve with a drizzle of maple syrup.

Cannoli Filled Ebelskivers

Cannoli Filling

  • ¾ cup whole milk ricotta cheese
  • ¼ cup ⅓ less fat cream cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ¼ cup + 2 tbsp mini semi sweet chocolate chips

Ebelskivers

  • 1 cup flour
  • 1½ tbsp sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • pinch salt
  • 1 egg
  • 1 tbsp canola oil
  • 1 cup whole milk
  • ¼ tsp vanilla extract
  • ½ tbsp marsala cooking wine

Cannoli Filling

  1. Add the ricotta cheese and the cream cheese to the stand mixer bowl. Mix on the stir setting using the whisk attachment until lumps disappear. Turn to medium setting if needed. Add in the powdered sugar, vanilla extract and mix using the stir setting as well.

  2. Once combined, remove the bowl from the stand mixer, fold in the chocolate chips and set aside in the fridge. This will help set the filling as it will be a little loose initially.

Ebelskivers

  1. Add the dry ingredients to a bowl and stir. In a separate bowl, add the wet ingredients and stir until combined. Add in the wet ingredients to the dry mix and stir until fully combined.

  2. Heat up the ebelskiver pan over medium heat and brush with some oil. Carefully pour in the ebelskiver mix into the pan while watching not to overfill it. You will want to get as close to the top of the pan but leave enough room for it to rise. Allow to cook until it begins to brown about 2-3 minutes.

  3. Once the ebelskivers begin to set, you will see bubbles on top just as you would pancakes. Use a spatula to orbit the ebelskivers until it is flipped and the top is now on the bottom. Allow to cook for an additional minute and carefully remove the ebelskivers. Set aside on a cooling rack while you cook the other batches. This recipe should yield about 18- 21 ebelskivers.

  4. Once the ebelskivers are done, use a knife to cut a slit in the middle and pull apart with your fingers to create an opening. Fill the ebelskivers with the cannoli filling, dust with some powdered sugar and drizzle some maple syrup.
