Plantain, Egg & Avocado Breakfast Sandwich

I seem to be falling more and more in love with plantains as I explore different ways to use them. This breakfast sandwich is the perfect way to start your day. Air fried plantain, egg and mashed avocado all go into this breakfast sandwich that is bound to keep you full.

One of the reasons I never used to have plantains too often was because of all the frying involved. Air fryers are being used like never before and you can fry just about anything in them. When I first thought of air frying plantains, I figured it probably wouldn’t work or come out as good. What I didn’t know was that the magic was all in the sugar content of the ripe plantains.

Between the natural sugar content and a little cooking spray, the airfryer does an amazing job of frying and caramelizing the sugars in the plantain. A breakfast sandwich is nothing without eggs. Whether you decide to have yours scrambled, fried or boiled, the combination of eggs, plantain and avocado is mesmerizing.

Don’t be afraid to add flavor to your mashed avocado as I did in mine. I sprinkled some Trader Joe’s everything but the elote seasoning blend (not sponsored) to my mashed avocado to give it a nice bold flavor.

Plantain, Egg and Avocado Breakfast Sandwich

Air fried plantains, soft scrambled eggs and mashed avocado between to buttery toasted slices of bread

  • 4 eggs
  • 2 slices cheese of choice
  • 1 plantain (ripe)
  • 1 avocado
  • 4 slices bread/bagel of choice
  • salt and pepper to taste
  • Trader Joe's Everything But the Elote seasoning blend (optional) (sprinkle)
  1. Preheat air fryer to 400°. Remove the skin from the plantain and lightly spray with cooking spray. Place the plantain in the air fryer once it's preheated and cook for about 10-12 minutes, turning halfway.

  2. While the plantain cooks, prepare the eggs whichever way you would like. I prefer soft scramble which is cooked gently over low heat and folded/shaped to the dimensions of the bread as it begins to set.

  3. Cut the avocado in half, remove the pit, large dice and scoop out using a spoon. Place in a bowl and mash it up with a fork, leaving some chunks for texture. Sprinkle with salt OR go bold with Trader Joe's Everything But the Elote seasoning blend.

  4. Toast your bread/bagel and build the sandwiches. Cut the plantain in half and butterfly it. Then, top a slice of bread the air fried plantain, egg, cheese and mashed avocado. Top with the other half of the bread and enjoy!
