This brunch cocktail might be one version of a mimosa you have never had. It will however be your new favorite brunch cocktail. This guava mimosa is all about the tropical vibes and sure to be a hit at any brunch gathering. It is so refreshing and easy to make using just two ingredients.
Making this recipe is so easy and a great addition to your brunch menu on the weekends. All you need is champagne or prosecco and guava juice. I used diet guava juice but feel free to use regular guava juice as well. Rule of thumb for making mimosa is to use two parts champagne to one part juice.
You also want to try to avoid using ice as that would water it down. So freezing the guava juice overnight in ice cube trays is a good substitute for ice. Depending on how thick or watery you want your mimosa, you might want to try using a little less champagne or add a little ice.

Frozen Guava Mimosa
- 1 can (9.6 oz) guava juice (frozen)
- 2 cups champagne
Freeze the guava juice in ice cube trays overnight. Add the frozen guava juice and champagne to a blender and pulse until creamy. Use about 1½ cups of champagne and add the rest depending on how liquidy you prefer. Add a little ice if you want it a little thicker. Serve in champagne glasses and enjoy.
