Limoncello Hibiscus Collins

This Limoncello Hibiscus Collins is a modern twist on the classic Tom Collins. Collins is a classic drink that consist of gin, lemon juice and carbonated water. This modern take on it uses limoncello in addition to lemon juice, Tazo berry hibiscus mixer and ginger beer.

I recently made limoncello ricotta pancakes and I am excited to go a different route using limoncello once again. This is a pretty strong drink with fruity notes and it pairs well with your favorite bar snacks.

Tazo Berry Hibiscus can be found at Walmart and online at Amazon, but feel free to use options like hibiscus tea. The berry hibiscus mixer and ginger beer add a little sweetness that balances out the flavors of this drink. This twist stays true to the original recipe with only a little addition. Perfect weekend drink and can be made in a pitcher for large gatherings.

Limoncello Hibiscus Collins

  • Shaker
  • 3 oz gin
  • 2 oz limoncello
  • 2 oz Tazo Berry Hibiscus mixer (or any hibiscus beverage (tea))
  • 1 lemon (juiced)
  • ginger beer (splash)
  • ice
  1. Add the gin, limoncello, hibiscus berry mixer, lemon, and some ice to a shaker and shake until combined.

  2. Add some ice into 2 cocktail glasses, pour the contents of the shaker into the glasses and add a splash of ginger beer.

  3. Enjoy!
