Guava Cream Cheese Stuffed French Toast

Pastelito is a popular Cuban pastry consisting of puff pastry filled with cream cheese and sweetened fruit pulps. The most popular filling is cream cheese and guava. This stuffed french toast mimics those flavors by stuffing guava cream cheese between two slices of brioche bread.

This is a brunch recipe that will easily impress your guests if you have a brunch gathering. Nonetheless, you do not have to guest to enjoy this recipe. You can simply whip this up any given weekend in no time. The guava cream cheese filling is made using whipped cream cheese and guava jelly.

You can use any bread that is thick like Texas toast or french baguette. I used sliced brioche bread that is already sweet and buttery for maximum flavor.

The stuffed brioche is then dipped in an egg batter that is flavoured with cinnamon and some cane sugar. I mean it doesn’t get easier than this and you can have this ready in just under a half hour.

Guava Cream Cheese Stuffed French Toast

  • 6 slices brioche bread
  • 2 eggs
  • ¼ cup light cream
  • ½ cup milk (light or whole)
  • 6 tbsp whipped cream cheese
  • 3 tbsp guava jelly
  • 1 tsp cane sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp butter (unsalted)
  • ½ tsp cinnamon powder
  • pinch salt
  1. Heat a skillet or cast iron pan over medium heat. Make the filling for the french toast. In a small mixing bowl add the cream cheese and the guava jelly and mix using a spoon.

  2. Make the egg batter. Crack the eggs into a seperate bowl, add the cream, milk, vanilla extract, cinnamon powder, cane sugar and a pinch of salt. Whisk until fully combined and set aside.

  3. Take 3 of the brioche slices and split the guava cream cheese filling evenly between the slices. Top with the leftover brioche slices.

  4. Add a tablespoon of butter to the heated pan or skillet. Dip the stuffed brioche slices into the egg batter and then flip to get the mixture on the other side. Transfer to the pan and repeat for the other two stuffed slices. Allow to brown and crisp for about 5 minutes, add the other tablespoon of butter if needed then flip the stuffed french toast to cook the other side. Once finished, slice diagonally and serve with maple syrup and fruit if desired.
