Grilled Pineapple and Blueberry Parfait

Parfaits are something that I have only had a handful of times, well maybe once. While I wasn’t disappointed with it, I still wasn’t that impressed. Now this parfait is something I can live with all day long. Flavored yogurt topped with blueberries and grilled pineapples will make this a slightly sweet treat for breakfast.

This is also perfect for an afternoon snack or if you’re like me, it is also fine for dessert. I used two percent yogurt and flavored it with a splash of pineapple liquid from the can. I also added a little bit of vanilla paste which helps give the yogurt a little flavor.

Feel free to use pineapple slices straight out the can but for more depth, toss it on a grill pan for about 5-7 minutes flipping halfway. Fresh blueberries or frozen blueberries that have been thawed is also added in between the mixed yogurt. For a nice little crunch, top with your choice of granola.

  • 1½ cups plain yogurt (2%)
  • 4 slices pineapple
  • ½ cup fresh blueberries
  • ½ tsp vanilla paste or extract
  • 2 tbsp granola (optional)
  • ½ tbsp maple agave syrup or honey
  1. Add the yogurt, vanilla paste and agave syrup to a mixing bowl and stir. If you are using pineapple slices from a can then add a splash of the pineapple juice.

  2. Grill the pineapple slices on a grill pan for about 7 minutes flipping halfway. It will turn a few shades darker and caramelize while it cooks.

  3. Once you have all that set you can begin layering preferably in a mason jar. This should yield enough to fit two 5 ounce mason jars. Add enough yogurt to fill a third of the jar, then the blueberries. Top with more yogurt and cut up the pineapple slices to top that. Feel free to sprinkle a little granola on top. Enjoy!
